Black Bean Stew

Black beans are so delicious by themselves, you only need a few ingredients to make this stew!

Ingredients

  • 1 cup black beans (dry)
  • 2 stalks green onions (finely chopped)
  • 3 stalks celery (chopped)
  • 1/2 serano pepper (finely chopped)
  • 1 ” fresh ginger (grated)
  • 1 tablespoon lemon zest

Directions

1. Soak the beans in water for 8-12 hours. Rinse the beans and in a pot of water cook the beans till they are soft about 30 – 45 mins. You can also use a pressure cooker to cook the beans
2. Add the ginger, onions, Serrano pepper and celery. Cook till the celery is slightly crunchy.
3. Serve hot on a bed of rice.
